Global 6.25" Meat Cleaver

The Global G-12 6.25" Meat Cleaver achieves an effective balance of heft and sharpness, and it is compact enough for practical use on the line or at home. The blade is forged from Global's impressive CROMOVA 18 Molybdenum/vanadium stainless steel alloy and joined seamlessly to a stainless steel handle. This designer steel takes and holds an excellent edge and resharpens well. The G-12 blade is thick enough to weigh in at just under a pound (15.5 oz), which isn't bad considering it's compact size. The straight, mostly flat edge is cut to a 15° per side bevel, and is sharper than most meat cleavers. And we love that it has an old-school cut-out at the top corner for hanging! The hefty weight-forward blade with keen edge will split poultry and fowl all day long without trouble, and should reliably cleave medium-sized and smaller bones and joints of lamb, pork and veal.
